- ½ cup fresh mint, chopped
- ½ cup shelled, roasted pistachios, roughly chopped
- ½ cup crumbled feta cheese
Dressing Ingredients
- Juice of ½ a lemon
- ½ cup extra-virgin olive oil
- 1 teaspoon Dijon mustard
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Cook Bulgur: Cook the bulgur wheat according to the package instructions. Once cooked, fluff it with a fork and let it cool to room temperature to prevent wilting the other fresh ingredients.
- Combine Salad Ingredients: In a large bowl, combine the cooled bulgur, drained chickpeas, finely chopped red onion, diced cucumbers, chopped parsley, chopped mint, roughly chopped pistachios, and crumbled feta cheese.
- Prepare Dressing: Add lemon juice, extra-virgin olive oil, Dijon mustard, salt, and freshly ground black pepper into a mason jar. Screw the lid on tightly, then shake vigorously for about 30 seconds until well combined. Taste and adjust seasoning if needed by adding more salt or pepper.
- Toss Salad: Pour the prepared dressing over the salad ingredients. Toss everything thoroughly to ensure the flavors are evenly distributed.
- Chill Salad: Refrigerate the salad for at least one hour to allow the flavors to meld and develop further enhancing the taste.
- Serve: Serve the salad chilled or at room temperature as a refreshing, healthy meal or side dish.
