Ingredients

Dry Ingredients

  • 4 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 tablespoons aluminum-free baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons kosher salt

Wet Ingredients and Additions

  • 3/4 cups unsalted butter (cold and straight from the fridge)
  • 1 cup buttermilk + 2 tablespoons (cold and straight from the fridge)
  • 1 large egg
  • 2 cups diced strawberries (approximately 10 strawberries)
  • 1 egg for egg wash

For the Vanilla Glaze

  • 1 cup powdered sugar
  • 1 scraping of 1/2 of vanilla pod
  • 2 teaspoons milk of choice (oat milk recommended)
  • Flakey sea salt (for topping)

Instructions

  1. Prepare the baking sheet: Line a baking sheet with parchment paper and set aside to ready your workspace.
  2. Mix dry ingredients and incorporate butter: In a large bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and kosher salt. Using a cheese box grater, grate the cold unsalted butter into the flour mixture for even distribution. Place the bowl in the freezer for 5-7 minutes while assembling wet ingredients.
  3. Prepare buttermilk mixture and egg wash: Measure the buttermilk and whisk with one large egg until combined. In a small separate bowl, whisk another egg with buttermilk for the egg wash. Refrigerate both mixtures until needed.
  4. Incorporate butter into flour and add strawberries: Retrieve the flour mixture from the freezer and gently press the grated butter into the flour with your hands until the mixture turns pale yellow. Toss in the diced strawberries to coat them evenly with the flour-butter blend.
  5. Combine wet and dry ingredients: Pour the buttermilk and egg mixture all at once into the flour-strawberry mixture. Mix gently until barely combined, then lightly knead the dough until it forms a solid mass. Flour your countertop and roll out the dough to 3/4-inch thickness.
  6. Cut and chill the biscuits: Using a 2 1/2-inch biscuit cutter, cut out about 6 biscuits. Recombine scraps to cut 2 more biscuits. Arrange them on the prepared baking sheet and freeze for 15 minutes to chill thoroughly.
  7. Preheat oven and bake: Preheat your oven to 400°F (204°C). Whisk an egg with a tablespoon of water to create the egg wash and brush it over the chilled biscuits. Bake biscuits for 13-15 minutes, or until they are tall and medium golden brown.
  8. Make the vanilla glaze: In a medium bowl, whisk together powdered sugar, the scraping from half a vanilla pod, a pinch of salt, and the milk until thick but pourable.
  9. Glaze and serve: As soon as the biscuits come out of the oven, drizzle the vanilla glaze over the warm biscuits. Sprinkle with flakey sea salt if desired and serve immediately.
