Ingredients
Pasta
- 12 lasagna noodles
Cheese Mixture
- 15 oz ricotta cheese
- 1 large egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
Meat and Sauce
- 16 oz ground chicken sausage
- 25 oz marinara sauce
- 1 tbsp olive oil (divided)
- 1 tsp dried oregano
- 1 tsp dried basil
Topping
- 8 oz fresh mozzarella, sliced
Instructions
- Cook Pasta: Cook the lasagna noodles according to package instructions until al dente. Drain and rinse with cold water to stop cooking, then set aside.
- Preheat Oven & Prepare Dish: Preheat your oven to 375 degrees F and spread a thin layer of marinara sauce to cover the bottom of a 9×13 inch baking dish.
- Cook Sausage: Heat half the olive oil in a sauté pan over medium heat. Add the ground chicken sausage, breaking it up, and cook thoroughly until no longer pink.
- Add Sauce to Sausage: Pour in the marinara sauce and mix well until the sausage is fully coated. Turn off the heat while preparing the cheese mixture.
- Prepare Cheese Mixture: In a large bowl, combine ricotta, dried oregano, dried basil, egg, grated parmesan, and shredded mozzarella. Mix until fully blended.
- Assemble Rolls: Lay one lasagna noodle flat. Spoon a portion of the cheese mixture in the center, then top with a spoonful of the meat sauce. Carefully roll the noodle up around the filling.
- Place Rolls in Dish: Place each rolled noodle seam-side down into the prepared baking dish. Repeat with remaining noodles.
- Add Toppings: Spoon additional marinara sauce over the top of the rolls and place a slice of fresh mozzarella on each roll.
- Prepare for Baking: Spray a piece of aluminum foil with nonstick spray and cover the baking dish tightly with it.
- Bake: Bake covered for about 35 minutes until heated through.
- Broil (Optional): For a golden bubbly top, remove the foil and broil for 2-3 minutes, watching carefully to avoid burning.
- Rest and Serve: Remove from the oven and let the lasagna rolls sit for 10 minutes before serving. Enjoy!
Notes
- You can substitute ground chicken sausage with ground turkey sausage or pork sausage if preferred.
- Using fresh mozzarella slices on top adds a wonderful creamy texture and melty finish.
- Make sure not to overcook the noodles; al dente is ideal to prevent sogginess when rolling.
- The rolls can be assembled a day ahead and baked fresh, making this great for meal prep.
- If you want extra herb flavor, add fresh basil or parsley to the ricotta mixture.
