Ingredients

Pasta

  • 12 lasagna noodles

Cheese Mixture

  • 15 oz ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese

  • 16 oz ground chicken sausage
  • 25 oz marinara sauce
  • 1 tbsp olive oil (divided)

Instructions

  1. Cook Pasta: Cook the lasagna noodles according to package instructions until al dente. Drain and rinse with cold water to stop cooking, then set aside.
  2. Preheat Oven & Prepare Dish: Preheat your oven to 375 degrees F and spread a thin layer of marinara sauce to cover the bottom of a 9×13 inch baking dish.
  3. Cook Sausage: Heat half the olive oil in a sauté pan over medium heat. Add the ground chicken sausage, breaking it up, and cook thoroughly until no longer pink.
  4. Add Sauce to Sausage: Pour in the marinara sauce and mix well until the sausage is fully coated. Turn off the heat while preparing the cheese mixture.
  5. Prepare Cheese Mixture: In a large bowl, combine ricotta, dried oregano, dried basil, egg, grated parmesan, and shredded mozzarella. Mix until fully blended.
  6. Assemble Rolls: Lay one lasagna noodle flat. Spoon a portion of the cheese mixture in the center, then top with a spoonful of the meat sauce. Carefully roll the noodle up around the filling.
  7. Place Rolls in Dish: Place each rolled noodle seam-side down into the prepared baking dish. Repeat with remaining noodles.
  8. Add Toppings: Spoon additional marinara sauce over the top of the rolls and place a slice of fresh mozzarella on each roll.
  9. Prepare for Baking: Spray a piece of aluminum foil with nonstick spray and cover the baking dish tightly with it.
