These BBQ & Goat Cheddar Chicken Taquitos combine tender rotisserie chicken tossed in a smoky barbecue sauce with creamy goat cheddar cheese, wrapped in cassava flour tortillas, and baked to a perfect crisp. Accompanied by a zesty BBQ dipping sauce with a hint of jalapeño, these taquitos offer a deliciously spicy and satisfying snack or meal ready in just 40 minutes.

  • Total Time: 40 minutes
  • Yield: 4 servings (8 taquitos)

Ingredients

Chicken Filling

  • 1 tablespoon avocado oil
  • 1 small yellow onion, diced
  • 1 jalapeño, seeded and diced, divided
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups finely shredded rotisserie chicken
  • 2 green onions, ends trimmed and finely chopped
  • 1 tablespoon freshly squeezed lime juice
  • 2 tablespoons dairy-free sour cream (e.g., Kite Hill)
  • 1/3 cup barbecue sauce (less-sugar Smoky BBQ Sauce by Noble Made)
  • 1/2 cup shredded goat cheddar cheese
  • 1 tablespoon avocado oil (for warming tortillas)
  • 8 cassava flour tortillas (8-inch, e.g., Siete Foods)

Dipping Sauce

  • 1 cup dairy-free sour cream (e.g., Kite Hill)
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons barbecue sauce
  • 1/2 jalapeño, minced (remaining from the divided amount)
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Sauté Aromatics: Heat 1 tablespoon avocado oil in a medium skillet over medium heat. Add the diced onion and half of the minced jalapeño, reserving the rest for the dipping sauce. Cook until onions are translucent, about 4 minutes.
  2. Add Spices and Garlic: Stir in minced garlic, chili powder, kosher salt, and freshly ground black pepper. Toast the spices until fragrant, about 1 minute. Remove from heat.
  3. Combine Chicken Filling: In a medium bowl, combine shredded rotisserie chicken, green onions, lime juice, dairy-free sour cream, barbecue sauce, shredded goat cheddar cheese, and the cooked skillet mixture. Mix well and set aside.
  4. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  5. Warm Tortillas: In the same skillet, heat about 1 teaspoon avocado oil over medium heat. Warm one tortilla for 15-30 seconds per side until pliable. Quickly transfer to the baking sheet.
  6. Assemble Taquitos: Spoon approximately 3 tablespoons of the chicken filling onto the center of the warm tortilla. Roll the tortilla tightly into a taquito, placing it seam-side down on the baking sheet.
  7. Repeat Tortilla Warming and Rolling: Add more avocado oil as needed to the skillet to warm remaining tortillas one by one. Roll each with filling and place seam-side down on the baking sheet.
  8. Bake Taquitos: Place the baking sheet on the middle rack and bake for 20-25 minutes until taquitos are golden brown and crisp on all sides.
  9. Drain Excess Oil: Remove from oven and transfer taquitos to a paper towel-lined plate to soak up any excess grease.
  10. Prepare Dipping Sauce: While taquitos bake, combine sour cream, lime juice, barbecue sauce, remaining minced jalapeño, garlic, kosher salt, and black pepper in a small bowl. Stir well and refrigerate until serving.
  11. Serve: Serve warm taquitos with the prepared BBQ dipping sauce on the side. Enjoy!

Notes

  • Use cassava flour tortillas for a gluten-free option that holds well when baked.
  • Adjust jalapeño quantity according to desired heat level.
  • Shredded rotisserie chicken is a convenient shortcut, but homemade cooked chicken works too.
  • For a dairy-free version, use dairy-free cheeses and sour cream as listed.
  • Make sure to roll tortillas tightly to prevent filling spilling during baking.
  • If you prefer extra crispy taquitos, you can brush them lightly with avocado oil before baking.
