This Bang Bang Chicken Skewer recipe features tender, juicy chicken thighs marinated in a flavorful blend of soy sauce, honey, sriracha, lime juice, and avocado oil, then grilled to perfection and served with a creamy, spicy bang bang sauce. Perfect for summer barbecues or a vibrant weeknight dinner, this dish combines sweet, tangy, and spicy flavors with a satisfying smoky char from the grill.

  • Total Time: 1 hour 15 minutes
  • Yield: 6 servings

Ingredients

For the Chicken Marinade

  • 3 lbs. boneless, skinless chicken thighs, cut into 1.5-inch chunks (excess fat trimmed)
  • ¼ cup low sodium soy sauce
  • 1 Tbsp. honey
  • 2 Tbsp. sriracha
  • 2 Tbsp. lime juice
  • 2 Tbsp. avocado oil
  • 1 tsp. kosher salt
  • Black pepper, to taste
  • Bamboo or metal skewers (if bamboo, soak in water for 30 minutes)

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 1 Tbsp. sriracha
  • 1 Tbsp. honey
  • 1 Tbsp. lime juice
  • 1 clove garlic, minced
  • Chopped fresh cilantro, for garnish

Instructions

  1. Prepare the Marinade: In a large bowl or zip-top bag, combine soy sauce, honey, sriracha, lime juice, avocado oil, kosher salt, and black pepper. Add the chicken pieces and toss well so they are thoroughly coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours to develop flavor.
  2. Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, honey, lime juice, and minced garlic. Adjust the heat and sweetness to your preference. Refrigerate this sauce until you are ready to serve.
  3. Skewer the Chicken: Thread the marinated chicken pieces onto the soaked bamboo or metal skewers, ensuring pieces are evenly spaced for uniform cooking.
  4. Preheat and Prepare the Grill: Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
  5. Grill the Chicken Skewers: Place the skewers on the grill and cook for 13–15 minutes, turning occasionally to get an even char and ensure the chicken is cooked through. Begin checking for doneness around 10 minutes to avoid overcooking.
  6. Serve with Bang Bang Sauce: Brush the grilled chicken skewers generously with the prepared bang bang sauce just before serving, or serve the sauce on the side as a dip. Garnish with chopped fresh cilantro for a pop of color and fresh flavor.

Notes

  • Soak bamboo skewers in water for at least 30 minutes before grilling to prevent them from burning.
  • Use low sodium soy sauce to better control the saltiness of the marinade.
  • The bang bang sauce can be prepared ahead and stored in the refrigerator for up to 3 days.
  • Adjust sriracha quantities in the marinade and sauce to control the spiciness according to your preference.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safe consumption.
