Ingredients
Pizza Dough
- 16 ounces pizza dough, store bought or homemade, at room temperature
- ½ tablespoon olive oil
Filling
- ¾ cup pizza sauce
- ½ teaspoon dried Italian seasoning or basil
- ½ teaspoon garlic powder
- 1 cup loosely packed baby spinach, finely chopped after measuring
- ½ cup finely chopped bell pepper
- ⅓ cup finely grated carrots, loosely packed
- 20 pepperoni slices or to taste (omit for vegetarian option)
- 1½ cups shredded mozzarella cheese, divided
- ¼ cup grated parmesan cheese
- Any other pizza toppings your family enjoys (optional)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 400℉ and line a standard 12-hole muffin tin with liners or lightly grease it to prevent sticking.
- Roll Out Dough: Lightly flour a large cutting board or surface and roll out the pizza dough into an 11 x 16 inch rectangle, ensuring an even thickness for consistent baking.
- Brush with Olive Oil: Brush olive oil over the surface of the pizza dough. This helps create a barrier between the dough and your sauce and veggies so that your pizza rolls aren’t soggy.
- Add Sauce and Seasonings: Spread the pizza sauce evenly over the oiled dough surface. Sprinkle dried Italian seasoning and garlic powder evenly over the sauce for extra flavor.
- Layer Vegetables and Pepperoni: Spread the chopped spinach, grated carrots, bell peppers, and pepperoni (if using) evenly over the sauce layer.
- Add Cheeses: Sprinkle 1 cup of shredded mozzarella and all of the grated parmesan cheese evenly on top of the vegetable and pepperoni layer.
- Roll the Dough: Starting on one of the long sides, carefully roll the dough up into a tight log, ensuring the filling stays inside.
- Slice into Rolls: With the roll seam-side down, cut the log into 12 even pieces using a serrated knife. For best results, cut the log in half, then halving each section again, and finally cutting each section into thirds to keep slices uniform.
- Arrange and Top: Place each pizza roll slice into a muffin tin compartment. Sprinkle the tops evenly with the remaining ½ cup of shredded mozzarella cheese.
- Bake: Bake the pizza rolls in the preheated oven for 18-20 minutes or until the dough is golden brown and the cheese on top is melted and bubbly.
- Cool and Serve: Let the pizza rolls cool in the pan for 5 minutes before transferring them to a cooling rack. Enjoy warm or let cool completely before storing in an airtight container in the fridge for up to 5 days.
