- 2 (16 oz) packages super firm tofu, crumbled
- 1 cup marinara sauce
- 1 1/4 cup pure pumpkin puree
- 1 tablespoon maple syrup
- 2 tablespoons ketchup
- 2 teaspoons apple cider vinegar
- 2 teaspoons tamari
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 2 teaspoons dijon mustard
- 1 teaspoon ground cumin
- 1/4 teaspoon pumpkin pie spice (or more if desired)
- 1/2 teaspoon salt (or more to taste)
- 1/2 teaspoon black pepper
- 6-8 hamburger buns
Instructions
- Prepare the tofu: Pat the tofu dry and press out any excess liquid using a tofu press if needed. Crumble the super firm tofu into small pieces with your hands to resemble the texture of sloppy joe meat. Set aside.
- Sauté onions and tofu: Heat one tablespoon of olive oil in a large pan over medium heat. Add the diced onion and crumbled tofu. Cook for about 5 minutes until the onions soften and the tofu turns golden brown. Add the minced garlic and sauté for another minute until fragrant.
- Add sauces and spices: Stir in the pumpkin puree and marinara sauce until well combined. Then add ketchup, dijon mustard, apple cider vinegar, tamari, maple syrup, smoked paprika, chili powder, ground cumin, pumpkin pie spice, salt, and black pepper. Mix everything thoroughly and cook on low heat for 3 to 5 minutes, allowing the flavors to meld together.
- Toast buns and serve: Toast the hamburger buns if desired. Spoon generous amounts of the pumpkin sloppy joe mixture onto each bun and add any additional favorite toppings. Serve immediately and enjoy!

- For best results, use super firm tofu which requires minimal pressing.
- Adjust pumpkin pie spice to taste for a sweeter or more spiced flavor.
- Serve with a side of fresh vegetables or a salad for a complete meal.
