Ingredients

Tofu and Coating

  • 1 (14 to 16-ounce) block super-firm tofu (see note)
  • Sea salt (to taste)
  • 1 cup panko breadcrumbs
  • 2 tablespoons nutritional yeast
  • 2 tablespoons avocado oil (or olive oil, divided)

Mayonnaise Mixture

  • 3 tablespoons vegan mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground turmeric

Wrap Filling

  • 1 large head romaine lettuce, chopped
  • 1/2 cup vegan Caesar dressing, plus more as needed
  • 4 large wraps or tortillas
  • Optional: lemon wedges for serving

Instructions

  1. Prepare the Tofu: Slice the super-firm tofu into 4 even slabs and season generously with sea salt on both sides to enhance flavor.
  2. Mix the Panko Coating: In a shallow bowl, combine the panko breadcrumbs with nutritional yeast and set the mixture aside for breading the tofu.
  3. Make the Mayonnaise Mixture: In a separate small bowl, whisk together vegan mayonnaise, Dijon mustard, poultry seasoning, kosher salt, black pepper, and ground turmeric until well combined to create a flavorful coating base.
  4. Coat the Tofu: Spread the mayonnaise mixture evenly over both sides of each tofu slab using a spatula or the back of a spoon. Then press each slab firmly into the panko mixture until the tofu is coated evenly on all sides.
  5. Cook the Tofu: Heat 1 tablespoon of avocado or olive oil in a large nonstick skillet over medium heat. Add the coated tofu slabs and cook for 4 to 5 minutes on each side until deeply golden and crispy. Add the remaining tablespoon of oil as needed during cooking. Once cooked, transfer the tofu to a cutting board and let it rest for 5 minutes to allow the crust to set before slicing.
  6. Prepare the Lettuce: In a large bowl, toss the chopped romaine lettuce with the vegan Caesar dressing until the leaves are evenly coated. Add more dressing if you prefer a creamier wrap.
  7. Slice the Tofu: After resting, slice the crispy tofu slabs into strips suitable for wrapping.
  8. Assemble the Wraps: Divide the dressed romaine lettuce among the four wraps. Top each with sliced tofu strips. Fold in the sides of each wrap and roll tightly. Slice each wrap in half for easier eating and serve immediately, optionally with lemon wedges for added brightness.

Notes

  • Use super-firm tofu to ensure it holds its shape well during cooking and becomes crispy on the outside.
  • If desired, add extra vegan Caesar dressing inside the wrap for a creamier texture.
  • Lemon wedges are optional but add a lovely fresh citrus flavor if squeezed over the wrap before eating.
  • Poultry seasoning is used here to mimic traditional chicken Caesar flavor; if unavailable, try a mix of dried sage, thyme, rosemary, and marjoram.
