Turkish Eggs, also known as Çılbır, is a simple yet elegant breakfast dish featuring creamy garlic-infused Greek yogurt topped with perfectly poached eggs and a fragrant paprika butter sauce. Served with toasted sourdough, it combines smooth, tangy, and spicy flavors for a comforting and nourishing start to your day.

  • Total Time: 15 minutes
  • Yield: 2 servings

Ingredients

Yogurt Mixture

  • 1 cup plain Greek yogurt
  • 1 garlic clove (crushed)
  • 1 tbsp fresh dill (finely chopped, plus a few more sprigs for garnish)
  • Salt and pepper (to taste)

Eggs

  • 4 eggs

Paprika Butter Sauce

  • 1.75 oz butter
  • 1/2 tbsp smoked paprika
  • 1/2 tsp red chili flakes
  • 1 tbsp olive oil (extra virgin, for drizzling)

To Serve

  • Toasted sourdough bread

Instructions

  1. Make Garlic Yogurt: In a small mixing bowl, combine the room-temperature Greek yogurt with crushed garlic, a good pinch of salt, and finely chopped fresh dill. Stir well to incorporate all flavors evenly. Divide this garlic yogurt mixture between two serving bowls.
  2. Poach Eggs: Bring a pan of water to a gentle simmer, ensuring it’s not boiling vigorously. Carefully lower the eggs into the simmering water, poaching them gently for 3 1/2 to 4 minutes until the whites are set and yolks remain soft. Use a slotted spoon to carefully remove the eggs, and season them with salt and pepper to taste.
  3. Make Butter Sauce: While the eggs are poaching, melt the butter in a small pan over medium heat. Add the smoked paprika and stir briefly. Remove the pan from the heat immediately to avoid burning the paprika. Optionally, stir in the red chili flakes for added warmth and spice.
  4. Assemble and Serve: Drizzle a small amount of extra virgin olive oil over the garlic yogurt in each bowl. Then pour the warm paprika butter sauce over the yogurt. Gently place the poached eggs on top, sprinkle with additional fresh dill sprigs for garnish, and serve immediately alongside toasted sourdough bread.

Notes

  • Ensure the water for poaching eggs is at a gentle simmer for tender, well-formed poached eggs.
  • Do not overheat the paprika in butter, as it can become bitter if burnt.
  • Use fresh dill for the best flavor, but dried dill can be substituted if needed.
  • Serve the dish immediately for optimal texture and temperature.
  • To toast sourdough, slice and lightly toast until golden and crisp.
