Instructions

  1. Roast Sesame Seeds: Add the sesame seeds to a heavy bottom pan. Roast on medium heat for 5 minutes until light brown and aromatic. Remove from heat and set aside.
  2. Prepare Sugar Syrup: In the same pan, add sugar and ghee. Stir in cardamom powder and salt. Cook over medium-low heat, stirring frequently. The sugar will first crystallize; keep mixing and breaking lumps as it melts into syrup. This process takes about 6 to 8 minutes.
  3. Combine Sesame Seeds with Syrup: Once syrup is ready, turn heat to low. Add the roasted sesame seeds and quickly mix to coat them evenly in the syrup.
  4. Spread the Mixture: Quickly pour the hot mixture onto a parchment paper-lined surface. Using a clean silicone spatula or a ghee-coated rolling pin, spread and roll it out thinly and evenly. Work fast before the mixture hardens.
  5. Score the Crisps: While still warm, cut the spread mixture into diamond or square shapes using a pizza cutter or knife.
  6. Cool and Store: Allow the pieces to cool completely to harden. Break along the scored lines and store in an airtight container.
