Ingredients

Truffle Mixture

  • 3 teaspoons sifted powdered sugar

Instructions

  1. Brew Espresso: Brew 3 tablespoons of espresso coffee and allow it to cool completely before using. This ensures the espresso won’t melt the mascarpone or affect the texture of the truffles.
  2. Crush Ladyfingers: Place the savoiardi biscuits into a blender or food processor and pulse until they form a fine powder consistency, resembling breadcrumbs.
  3. Prepare Cream Mixture: In a mixing bowl, combine the mascarpone cheese and sifted powdered sugar. Add the cooled espresso coffee and stir until a smooth, creamy mixture forms.
  4. Combine Ingredients: Add the crushed ladyfingers into the mascarpone-espresso mixture. Using a rubber spatula, fold thoroughly until all ingredients are well incorporated, resulting in a thick, dough-like batter.
  5. Form Truffles: Using your fingers or a teaspoon, scoop and roll the mixture into small balls, approximately 10 truffles in total. Place them on a plate as you go.
  6. Chill: Refrigerate the truffle balls for at least 1 hour to let them set. For a firmer texture, chill for a longer period as preferred.
  7. Coat with Cacao: Pour the cacao powder into a small bowl. One at a time, roll each chilled truffle in the cacao powder until fully coated.
