Ingredients
Chicken Marinade
- 1 lb (500g) chicken breasts, cut into bite-size pieces or strips
- 1 tsp baking soda
Sauce
- 2 garlic cloves, crushed
- 1 tsp crushed ginger
- ¼ cup soy sauce
- 2 tbsp rice vinegar
- ¼ cup hoisin sauce
- 2 tsp lemon juice
- 2 tsp honey
- ½ tsp chilli flakes
- 2 tsp cornstarch
Other Ingredients
- 2 green onions / spring onions, finely chopped
- 1 lb (500g) stir fry vegetables (store-bought mix)
- 2 tbsp oil (divided)
- Sesame seeds, for serving
- 8 oz (240g) noodles (ramen noodles or egg noodles), cooked
Instructions
- Marinate the Chicken: Place the chicken pieces in a mixing bowl and sprinkle over 1 teaspoon of baking soda. Massage the baking soda into the chicken thoroughly and let it marinate for 15 minutes. This process will tenderize the chicken.
- Prepare the Chicken: After marinating, rinse the chicken well under running water to remove excess baking soda, then pat the pieces dry using paper towels to ensure they brown nicely when cooked.
- Heat the Pan: Preheat a wok or a large frying pan/skillet over high heat. Add 1 tablespoon of oil to the pan and let it heat until shimmering.
- Cook the Chicken: Add the chicken pieces to the hot pan in batches if necessary to avoid overcrowding. Cook the chicken until golden brown on all sides and fully cooked through. Remove chicken from the pan and set aside.
- Make the Stir Fry Sauce: In a small bowl, whisk together crushed garlic, crushed ginger, soy sauce, rice vinegar, hoisin sauce, lemon juice, honey, chili flakes, and cornstarch until well combined to make the flavorful sauce.
- Cook the Vegetables: Add the remaining 1 tablespoon of oil to the same pan and heat over high heat. Add the stir fry vegetables and quickly stir fry for a few minutes until they are just cooked but still retain some crunch.
- Combine Chicken and Sauce: Return the cooked chicken to the pan with the vegetables. Pour in the prepared stir fry sauce and stir fry everything together for about one minute, allowing the sauce to thicken and coat the chicken and veggies evenly.
- Add Noodles: Add the cooked noodles to the pan and toss everything together thoroughly to combine the flavors evenly.
- Serve: Plate the stir fry and garnish with finely chopped green onions and a sprinkle of sesame seeds for added texture and nutty flavor. Serve immediately while hot.
