These Texas Roadhouse Rolls are soft, buttery, and slightly sweet dinner rolls perfect for any meal. Made with a rich dough that includes scalded milk and melted butter, they rise to fluffy perfection before baking to a golden brown. Served warm with a homemade cinnamon honey butter, these rolls bring a classic Southern comfort food experience to your table.

  • Total Time: 2 hours 30 minutes
  • Yield: 24 rolls

Ingredients

Dough

  • 4 teaspoons active dry yeast
  • 1/2 cup warm water
  • 2 cups milk (scalded and cooled to lukewarm)
  • 1/2 cup plus 1 teaspoon sugar (separated)
  • 3 tablespoons melted unsalted butter (cooled slightly, plus additional for brushing)
  • 7-8 cups all-purpose flour
  • 2 eggs
  • 2 teaspoons salt

Cinnamon Honey Butter

  • 1/2 cup unsalted butter (room temperature)
  • 1/4 cup confectioners’ sugar
  • 1/4 cup honey
  • 1 teaspoon cinnamon

Instructions

  1. Activate Yeast: In an electric mixer bowl, dissolve the yeast in warm water along with 1 teaspoon of sugar. This helps activate the yeast for a foamy, bubbly rise.
  2. Mix Batter: Attach the dough hook to your mixer and add the scalded lukewarm milk, remaining 1/2 cup sugar, and enough flour to make a medium batter. Mix well to combine.
  3. Allow to Foam: Let the mixture stand for 8-10 minutes until it becomes light and foamy, indicating the yeast is active.
  4. Add Remaining Ingredients: Add 3 tablespoons of melted butter (cooled slightly), eggs, and salt to the bowl. Beat the mixture thoroughly.
  5. Form Dough: Gradually add enough flour to create a soft dough. Turn the dough out onto a lightly floured surface and let it rest for about 10 minutes.
  6. Knead Dough: Spray a large bowl with cooking spray. Knead the dough until smooth and satiny, then place it in the prepared bowl turning to coat with oil. Cover tightly with plastic wrap.
  7. First Rise: Set the bowl in a warm place and allow the dough to double in size, about 1 to 1.5 hours.
  8. Punch and Roll Dough: Punch the dough down and then roll it out on a lightly floured surface into a rectangle about 1/2-inch thick using a floured rolling pin.
  9. Fold and Rest: Fold the rectangle short way so it is about 1 inch thick. Lightly roll to seal sides and let rest for 10 minutes.
  10. Cut Rolls: Using a dough scraper, cut dough into roll-sized pieces. Place them on a greased baking sheet, cover with a damp towel, and allow to rise for about an hour in a warm area.
  11. Preheat Oven & Bake: Preheat your oven to 350°F (175°C). Bake the rolls for 10-15 minutes until lightly browned on top.
  12. Brush Rolls: Remove rolls from oven and brush tops with the additional melted butter to add richness and shine.
  13. Prepare Cinnamon Honey Butter: In a medium bowl, beat 1/2 cup room temperature butter for about 30 seconds until lightly whipped.
  14. Add Sweeteners and Spice: Add 1/4 cup confectioners’ sugar, 1/4 cup honey, and 1 teaspoon cinnamon. Beat until smooth, scraping down the bowl sides as needed.
  15. Whip Butter Mixture: Continue beating on medium-high speed for 2-3 minutes until the butter is light and fluffy.
  16. Serve: Serve the warm rolls with generous spreads of the cinnamon honey butter for an irresistible treat.

Notes

  • Scalding the milk and allowing it to cool is important to develop the best texture for the rolls.
  • Ensure the yeast is active; if it does not foam, the yeast may be inactive and should be replaced.
  • Kneading until smooth and satiny is key to a tender crumb.
  • Letting the dough rise in a warm environment promotes proper yeast fermentation.
  • The cinnamon honey butter can be made ahead and refrigerated, just bring to room temperature before serving.
  • For softer crust, brush rolls with melted butter immediately after baking.
  • These rolls freeze well; thaw and warm before serving.
