Instructions
- Heat the Oil and Brown Chicken: Heat a dutch oven over medium-high heat and add the coconut oil. Once it shimmers, add the cubed chicken thighs, sprinkle with a pinch of salt, and toss to coat. Saute, stirring frequently, until the chicken is browned and no longer pink, about 7-8 minutes.
- Sauté Shallots, Garlic, and Ginger: Add the thinly sliced shallots to the pot, toss, and cook until softened, about 3-4 minutes. Then add the minced garlic and grated ginger, sautéing while stirring constantly for 2 minutes to release their aromas.
- Add and Toast Spices: Stir in the cumin, cardamom, cinnamon, kosher salt, and ground pepper. Continue sautéing and stirring frequently for 1-2 minutes until the spices are fragrant and toasted.
- Deglaze and Add Liquids: Pour the pomegranate juice into the pot and scrape up the browned bits from the bottom with a wooden spoon or rubber spatula. Stir until the pot bottom is clean. Add the chopped walnuts, coconut milk, and honey, giving everything a thorough stir to combine.
- Simmer the Chicken: Bring the liquid to a boil, then reduce heat to medium-low. Cover the pot and simmer for 20 minutes. Remove the lid slightly cracked and continue simmering for an additional 10 minutes, or until the sauce thickens and the chicken starts to fall apart. Stir occasionally to prevent the sauce from sticking and burning.
- Serve and Garnish: Spoon the tender chicken and sauce over steamed rice or your preferred base. Garnish with fresh pomegranate seeds and chopped parsley. Serve immediately and enjoy the rich, spiced flavors.
Notes
- For an even deeper flavor, marinate the chicken in the spices and a bit of pomegranate juice for 30 minutes before cooking.
- Walnuts add a nice crunch but can be substituted with pecans or almonds if preferred.
- If pomegranate juice is not available, you can substitute with a tart cranberry juice diluted with water, though the taste will differ slightly.
