This Taco Spaghetti recipe is a flavorful fusion dish combining classic taco seasonings with hearty spaghetti, topped with melted cheddar cheese and fresh cilantro. It’s perfect for a comforting weeknight dinner with a spicy kick and creamy texture.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Sauce Ingredients

  • 16 oz. tomato sauce
  • 2 1/2 cups beef broth
  • ½ cup sour cream
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon hot sauce

Meat and Vegetables

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced

Other Ingredients

  • 1 oz. packet Taco Seasoning
  • 1 (10 oz.) can Rotel tomatoes (do not drain)
  • 12 oz. spaghetti noodles
  • 1 ½ cups shredded Cheddar cheese
  • Fresh cilantro for garnish

Instructions

  1. Prepare the sauce mixture: In a large measuring cup, combine the tomato sauce, beef broth, sour cream, tomato paste, Worcestershire sauce, and hot sauce. Mix thoroughly and set aside to allow the flavors to meld while you prepare the other ingredients.
  2. Cook the beef and aromatics: Heat the olive oil in a large skillet over medium heat. Add the ground beef and finely chopped onion. Cook, stirring occasionally, until the beef is browned and no longer pink, and the onions are tender and translucent, about 6-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  3. Combine and simmer: Stir in the prepared sauce mixture from step one, taco seasoning packet, undrained Rotel tomatoes, and uncooked spaghetti noodles. Bring the mixture to a boil over high heat, then reduce the heat to low, cover the skillet, and let it simmer for 15 minutes or until the spaghetti is cooked through and has absorbed the flavors.
  4. Finish with cheese and garnish: Remove the skillet from heat. Sprinkle half of the shredded cheddar cheese into the pan and stir to combine, coating the spaghetti evenly. Then layer the remaining cheese on top and garnish with fresh cilantro. Serve hot and enjoy your flavorful Taco Spaghetti.

Notes

  • Do not drain the Rotel tomatoes as their juice adds extra flavor and liquid needed for cooking the spaghetti.
  • Adjust the hot sauce quantity based on your preferred level of spiciness.
  • For a creamier dish, ensure the sour cream is fully incorporated into the sauce mixture before cooking.
  • Use freshly chopped cilantro for the best garnish flavor and freshness.
  • This dish is best served immediately but can be refrigerated and reheated within 2 days.
