Sweet Potatoes
- 4 medium sweet potatoes

Sloppy Joe Filling
- 1 pound ground turkey
- ½ medium yellow onion, finely diced
- 1 small red bell pepper, finely diced
- 1 small carrot, finely diced
- 4 ounces mushrooms, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 cup tomato sauce
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup water
Toppings (Optional)
- 2 green onions, sliced
- ¼ cup sliced pickles
- ¼ cup pickled red onions
- Shredded cheddar cheese
Instructions
- Preheat Oven and Prepare Sweet Potatoes: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
- Prepare Sweet Potatoes: Scrub the sweet potatoes clean and pat them dry. Pierce each potato several times with a fork, then rub lightly with olive oil, salt, and pepper to season the skin.
- Bake Sweet Potatoes: Place the sweet potatoes on the prepared baking sheet and bake for 40–45 minutes until they are very tender when pierced with a knife, ensuring a soft inside for stuffing.
- Cook Turkey: While the sweet potatoes bake, heat a large skillet over medium-high heat. Add the ground turkey and cook for 5–7 minutes, breaking it apart with a wooden spoon until browned and cooked through.
- Sauté Vegetables: Add the finely diced onion, red bell pepper, carrot, and mushrooms to the skillet. Cook for 5–6 minutes until the vegetables soften and the turkey is fully cooked.
- Add Garlic and Tomato Paste: Stir in the minced garlic and tomato paste, cooking for about 1 minute to combine flavors and deepen the sauce.
- Mix in Sauces and Spices: Add tomato sauce, ketchup, Worcestershire sauce, apple cider vinegar, brown sugar, smoked paprika, chili powder, salt, pepper, and water. Stir well until combined.
- Simmer Filling: Reduce heat to medium-low and let the mixture simmer for 8–10 minutes, stirring occasionally until the sauce thickens and evenly coats the meat and vegetables.
- Prepare Sweet Potatoes for Filling: Remove the sweet potatoes from the oven and let cool for 2–3 minutes. Cut a deep slit lengthwise down each potato and gently open them.
- Stuff Sweet Potatoes: Fluff the insides of each sweet potato with a fork to create a soft base, then spoon approximately ¾ cup of the Sloppy Joe mixture over each potato.
- Add Toppings and Serve: Top with sliced green onions, pickles, pickled red onions, and shredded cheddar cheese if desired. Serve warm and enjoy.
Notes
- You can substitute ground turkey with ground beef or plant-based meat alternatives if preferred.
- For a spicier version, add cayenne pepper or hot sauce to the Sloppy Joe mixture.
- Leftover filling can be stored in the refrigerator for up to 3 days and reheated for another meal.
- Pickled red onions add a tangy flavor but are optional if unavailable.
