Sweet Potato Mixture

Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole later.
- Cook Sweet Potatoes: Bring a large pot of salted water to a boil, then reduce to medium-low heat and add the cubed sweet potatoes. Boil until the potatoes are fork-tender, about 20 minutes. Drain thoroughly.
- Mash Sweet Potatoes: Mash the cooked sweet potatoes using a potato masher until smooth. For an extra creamy texture without lumps, use a hand mixer to beat the potatoes.
- Mix Ingredients: Stir in the brown sugar, melted butter, ground cinnamon, and kosher salt until fully combined. Gradually add milk, a little at a time, until you reach your desired consistency—smooth and creamy but not runny.
- Prepare Casserole Dish: Lightly spray an 11 x 7-inch medium casserole baking dish with nonstick cooking spray. Evenly spread the sweet potato mixture into the dish.
- Add Marshmallow Topping: Sprinkle the 2 cups of mini marshmallows in an even layer over the sweet potato mixture.
- Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the marshmallows are melted and golden brown on top.
