Butter
- 1/2 cup butter (1 stick)

- 1 (15-oz) can whole kernel corn, drained
- 1 (15-oz) can creamed corn, not drained

- 3 tablespoons granulated sugar
- 1/2 teaspoon kosher salt (or 1/4 teaspoon table salt)
- 1 (8-oz) box Jiffy corn muffin mix
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the casserole evenly.
- Melt Butter: Place 1/2 cup butter in an 8×8 or 9×9 inch glass baking dish and melt it in the microwave. Use a spatula or pastry brush to spread the melted butter up the sides of the pan to prevent sticking during baking.
- Add Whole Kernel Corn: Drain the canned whole kernel corn by pressing the lid and pouring out the liquid. Add the drained corn directly into the buttered baking dish.
- Add Creamed Corn: Pour the entire can of creamed corn (including liquid) into the pan with the butter and whole corn.
- Add Sour Cream: Stir in 1 cup of sour cream to add creaminess and moisture.
- Add Sugar and Salt: Mix in 3 tablespoons of granulated sugar and 1/2 teaspoon kosher salt (or 1/4 teaspoon table salt) to enhance flavor and provide a slight sweetness.
- Add Corn Muffin Mix: Sprinkle the entire 8-ounce box of Jiffy corn muffin mix into the mixture.
- Combine Ingredients: Use a spatula to thoroughly stir all ingredients until fully combined and scrape down the edges.
- Bake: Bake in the preheated oven at 350 degrees Fahrenheit for 35-40 minutes until the edges turn golden brown and start pulling away from the pan. The center should be set and not overly jiggly. A toothpick inserted in the center should come out clean without wet batter.
- Cool and Serve: Remove from oven and let the casserole cool on a wire rack for a few minutes. Serve warm for the best texture and flavor.
Notes
- For a sweeter casserole, increase sugar to 1/2 cup or 3/4 cup instead of 3 tablespoons.
- For a cake-like, fluffier texture, add 2 eggs to the mixture before baking.
- Add cheese by omitting the sugar and mixing in 1 1/2 cups shredded cheddar cheese. Sprinkle an additional 1/2 cup of cheese on top. Optional additions include chopped jalapeños or cooked bacon.
- You can prepare this casserole in a slow cooker: use a 4-quart slow cooker (or double for a 6-quart), spray the edges to prevent sticking, cook on high for 2 hours or low for 3-4 hours.
- For a variation, reserve half the sour cream, add 2 eggs, mix together, then dollop remaining sour cream on top and swirl before baking. This takes slightly longer to bake.
