Chicken and Coating
- 500 g boneless skinless chicken breast, diced into 2.5 cm cubes
- 6 tablespoons cornstarch
- Salt and pepper to taste
- 50 ml vegetable oil for frying
Vegetables
- 1 onion, thinly sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
Sauce
- 6 tablespoons ketchup
- 2 tablespoons cider vinegar
- 6 tablespoons demerara or brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, grated
- 432 g tin pineapple pieces, drained (reserve the juice)
Instructions
- Prepare the Chicken: Place the cornstarch in a medium bowl and season it well with salt and pepper. Toss the diced chicken pieces in the cornstarch mixture until they are evenly coated to create a crispy outer layer when fried.
- Cook the Chicken: Heat the vegetable oil in a high-sided skillet over medium-high heat. Gently fry the coated chicken pieces on all sides until they turn golden brown. Remove the chicken from the skillet and place it on a plate lined with paper towels to drain excess oil. The chicken doesn’t need to be fully cooked at this stage.
- Cook the Vegetables: Using the same skillet, add the thinly sliced onion and scrape up any browned bits stuck to the bottom to infuse flavor. Add the chopped red and yellow bell peppers and cook until they begin to soften, which usually takes a few minutes.
- Prepare the Sauce: In a bowl or measuring jug, whisk together ketchup, cider vinegar, brown sugar, soy sauce, grated fresh ginger, and grated garlic to form the sweet and sour sauce mixture.
- Simmer the Sauce: Pour the prepared sauce into the skillet with the cooked vegetables and bring it to a gentle simmer. Add the drained pineapple pieces, reserving their juice to adjust the consistency of the sauce if needed.
- Combine and Cook Fully: Return the partially cooked chicken to the skillet. Simmer the entire mixture for another 5 to 6 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened to a glossy finish. Adjust the sauce by adding pineapple juice if you prefer it a bit thinner.

- You can substitute boneless chicken thighs for a juicier option.
- Adjust the sweetness and tanginess of the sauce to your liking by varying the sugar and vinegar quantities.
- Use low-sodium soy sauce for a less salty version.
- Ensure not to overcook the vegetables to keep a slight crunch for texture contrast.
