Ingredients
Pretzel Crust
- 4 cups pretzels
- 3 Tablespoons unsalted butter, melted
Cream Cheese Filling
- 2 (8-oz.) packages cream cheese, at room temperature
- 3 Tablespoons heavy cream
- 2 teaspoons lemon zest
- 2 Tablespoons lemon juice
- 1/4 cup white sugar
- 2 teaspoons vanilla extract
Topping
- 2 cups chopped strawberries
- Homemade or store-bought whipped cream, for topping
Instructions
- Prepare Pretzel Crust: Add the pretzels to the bowl of a food processor and pulse until finely ground. Then transfer the crushed pretzels to a medium bowl and stir in the melted butter until the mixture is well-combined. Set this mixture aside for assembly.
- Make Cream Cheese Filling: In the bowl of a stand mixer fitted with the paddle attachment, or using a handheld mixer, beat the cream cheese until smooth. Add the heavy cream, lemon zest, lemon juice, sugar, and vanilla extract, then continue beating until the mixture is smooth and creamy.
- Assemble the Base: Divide the pretzel mixture evenly among serving cups, reserving some of the mixture to sprinkle on top as a garnish later.
- Add Cream Cheese Layer: Spoon the cream cheese mixture on top of the pretzel crust in each cup. For a cleaner presentation, you may transfer the cream cheese filling to a piping bag, snip off the tip, and pipe the mixture into the cups.
- Add Strawberries: Spoon chopped strawberries evenly over the cream cheese mixture in each cup.
- Finish with Whipped Cream and Garnish: Top each cup with a generous dollop of whipped cream. Finally, sprinkle the reserved pretzel crumbs over the whipped cream as a decorative and crunchy garnish. Serve immediately or chill until ready to enjoy.
- Kelly’s Note: If you don’t have a food processor, crush the pretzels by placing them in a sealed plastic bag and crushing them with a rolling pin or heavy pan.
Notes
- This dessert is best served fresh, but can be refrigerated for up to 24 hours before serving.
- For a dairy-free variation, substitute cream cheese and heavy cream with plant-based alternatives, and use coconut whipped cream.
- Be sure to use room temperature cream cheese for a smooth filling.
- Adjust the sugar level to taste if you prefer it less sweet.
- Chilling the assembled cups for about 30 minutes can help the cream cheese layer set nicely.
