Ingredients
Fruit
- 1 pound fresh strawberries
Peanut Butter Layer
- 1½ cups peanut butter
Chocolate Topping
- 1½ cups semi-sweet chocolate chips (12-ounce bag)
- 2 teaspoons vegetable shortening
Garnish (Optional)
- Flakey sea salt
Instructions
- Prepare the base: Line a large cutting board or baking sheet with a 9×13-inch piece of parchment paper. This will serve as the base for your bark and make it easy to remove once set.
- Slice the strawberries: Wash and dry the strawberries thoroughly. Remove the tops to create a flat surface, then slice each strawberry lengthwise into thick slices. Trim off the rounded edges of the outer slices so they can lay flat on the parchment.
- Arrange the strawberries: Place the sliced strawberries evenly in rows on the parchment paper. Alternate their direction so the triangular ends fit snugly into the gaps of the adjacent rows, creating a neat mosaic pattern.
- Spread the peanut butter: Melt the peanut butter in the microwave for 15-20 seconds until soft enough to spread. Evenly coat the strawberries with the peanut butter layer. Place the entire board in the freezer for 5 minutes to firm up before adding the chocolate.
- Melt the chocolate and shortening: Combine the semi-sweet chocolate chips and vegetable shortening in a microwave-safe bowl. Heat in 20-second increments, stirring well after each until the mixture is smooth and fully melted.
- Top with chocolate: Pour the melted chocolate over the peanut butter layer and spread it evenly. Immediately sprinkle flakey sea salt on top if using, to add a contrasting savory touch.
- Freeze to set: Return the board to the freezer for at least two hours. This step allows the strawberries to firm up and the chocolate to solidify, creating a perfect bark texture.
- Slice and serve: Once set, slice the bark into pieces of your preferred size and enjoy this sweet and satisfying treat.
Notes
- Use good quality fresh strawberries for the best flavor and texture.
- Peanut butter can be substituted with almond or cashew butter for variation.
- If you prefer a dairy-free chocolate, opt for vegan chocolate chips.
- The vegetable shortening helps the chocolate maintain a smooth, glossy finish and firm texture.
- Store leftover bark in an airtight container in the freezer to keep it fresh and firm.
- Sprinkling sea salt is optional but enhances the chocolate and peanut butter flavors beautifully.
