Instructions
- Prepare Strawberries and Compote: If using homemade strawberry compote, prepare it first and allow it to cool. Then rinse, hull, and slice or dice the fresh strawberries.
- Sweeten Yogurt: In a bowl, combine the dairy-free yogurt (or cashew cream) with the icing sugar or powdered Erythritol. Stir until well mixed and smooth.
- Layer Parfait: Take 2-3 glasses or jars depending on size. Add a few tablespoons of granola at the bottom, followed by a layer of sliced strawberries. Next, spoon in a few tablespoons of the sweetened yogurt, then add a layer of strawberry compote.
- Repeat Layers: Repeat the layering process once more — granola, strawberries, yogurt, and compote — then decorate the top of the parfait with halved strawberries for a fresh finishing touch.
- Serve or Chill: Enjoy the parfait immediately for the freshest taste, or refrigerate the jars for about 30 minutes to chill and meld the flavors before serving.
