Ingredients
Dry Ingredients
- 2 Cups Old Fashioned Oatmeal (dry)
- 1/2 Cup All Purpose Flour
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Salt
Wet Ingredients
- 1/4 cup Maple Syrup
- 1/2 Cup Unsweetened Apple Sauce
- 2 Tablespoons Almond or Cashew Butter
Fruit Topping
- 1 Cup Chopped Strawberries
- 1/2 Cup Strawberry Jam
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the right temperature for baking the bars evenly.
- Prepare the Pan: Line a 9×9-inch baking pan with foil and lightly spray with nonstick cooking spray for easy removal and cleanup.
- Mix Dry Ingredients: In a large mixing bowl, combine the old fashioned oats, all purpose flour, baking powder, and salt, mixing thoroughly to distribute all dry components evenly.
- Add Wet Ingredients: Stir in the maple syrup, unsweetened apple sauce, and almond or cashew butter into the dry ingredients until fully combined and a moist dough forms.
- Press Mixture into Pan: Transfer the oat mixture to the prepared pan, pressing it down firmly and evenly with your hands to create a uniform base layer.
- Prepare Strawberry Topping: In a separate bowl, mix the chopped strawberries with the strawberry jam, then spread this mixture evenly over the pressed oat base in the pan.
- Bake the Bars: Place the pan in the preheated oven and bake for 45 to 50 minutes, or until the edges are golden brown and the strawberries on top are bubbling, indicating they are cooked through.
- Cool Completely: Remove the pan from the oven and let the bars cool completely at room temperature or place in the refrigerator to speed up cooling; this helps the bars set firm for cutting.
- Remove and Peel Foil: Once cool, lift the entire foil out of the pan carefully. Peel the foil away from the bars so they don’t stick, then place the bars onto a cutting board.
- Slice and Store: Cut into squares or bar shapes as desired. Store the bars in the refrigerator to keep them fresh for several days.
Notes
- Use a 9×9-inch pan for best results to ensure even thickness and baking.
- Substitute almond or cashew butter with any nut butter of your choice, but keep it natural and unsweetened.
- These bars can be stored in the refrigerator for up to 5 days or frozen for longer storage.
- For a gluten-free option, substitute all purpose flour with a gluten-free flour blend.
- Make sure to cool bars completely before slicing to avoid crumbling.
