Ingredients

Dry Ingredients

  • 1 1/2 cups (125g) old fashioned rolled oats
  • 1 cup (125g) whole wheat pastry flour (spoon and level) or oat flour
  • 1/2 cup (100g) brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp (heaping) salt

Wet Ingredients

  • 8 Tbsp unsalted butter, melted
  • 1 1/2 tsp vanilla extract
  • 1 1/2 Tbsp (30g) honey

Fruit Filling

  • 16 oz. strawberries, hulled and diced (3 cups) or 2 1/2 cups blueberries
  • 1 Tbsp (9g) cornstarch

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit. Grease a 9 by 9-inch baking dish or line it with parchment paper to easily remove the bars after baking.
  2. Mix Dry Ingredients: In a mixing bowl, toss together the oats, whole wheat pastry flour (or oat flour), brown sugar, baking powder, and salt using your fingers. Break up any clumps of brown sugar while mixing.
  3. Add Wet Ingredients: Stir vanilla extract into the melted butter. Pour this liquid mixture into the dry oat mixture and toss with a spatula until everything is evenly coated.
  4. Press Base Layer: Press nearly two-thirds of the oat mixture into the prepared pan, ensuring it barely covers the bottom. Reserve about one-third (around 180g) of the mixture for the topping.
  5. Prepare Fruit Filling: In a separate bowl, toss the diced strawberries with cornstarch and honey until well combined. Spread this fruit mixture evenly over the oat base layer in the baking dish.
  6. Add Top Crumble: Dot and sprinkle the remaining oat mixture over the strawberry layer. You can press pieces together slightly to create a chunkier crumble topping.
  7. Bake: Bake in the preheated oven until the bars turn golden brown and the strawberry juices are bubbling, about 35 to 40 minutes.
  8. Cool and Serve: You may spoon out the bars warm, but for cleaner, uniform squares, allow them to cool for 20 to 30 minutes before cutting.
  9. Storage: Store the bars in the fridge for up to 2 days or freeze them for up to 3 months for longer preservation.
