Ingredients
Dressing
- 1 batch cilantro lime dressing
Salad
- 6 cups finely chopped kale, stems removed
- 1 heaping cup halved strawberries
- 1 avocado, sliced or diced
- 1 cup corn, raw, grilled, or sautéed (prefer raw off the cob or grilled)
- ½ cup feta crumbles
- ¼ cup thinly sliced red onion
- ¼ cup shelled roasted and salted pistachios (or substitute toasted sliced almonds)
- 2 grilled chicken breasts
Instructions
- Prepare the kale: Start by finely chopping the kale leaves, removing the tough stems to ensure a tender texture. Place the kale in a large salad bowl.
- Dress the kale: Add the batch of cilantro lime dressing to the chopped kale. Massage the dressing into the kale with your hands for 1-2 minutes to soften and wilt the leaves, enhancing flavor absorption.
- Add the fruit and vegetables: Fold in the halved strawberries, sliced or diced avocado, and your choice of corn (raw, grilled, or sautéed). These ingredients add freshness, creaminess, and sweetness to the salad.
- Incorporate toppings: Sprinkle in the feta crumbles, thinly sliced red onion, and shelled roasted pistachios or toasted almonds for a mix of tanginess, sharpness, and crunch.
- Add the protein: Slice the grilled chicken breasts and arrange them on top or fold them gently into the salad for a hearty boost of protein.
- Toss and serve: Give the salad a gentle toss to combine all ingredients while maintaining some texture contrast. Serve immediately for the freshest taste and best texture.
Notes
- You can substitute the grilled chicken with tofu or chickpeas for a vegetarian version.
- Use raw corn off the cob for a crunchy texture or grilled corn for a smoky flavor.
- For extra zest, sprinkle some freshly ground black pepper or chili flakes.
- Make the cilantro lime dressing ahead and refrigerate to save preparation time.
- Season the salad lightly with salt if needed as the feta and dressing already add saltiness.
