Ingredients
Strawberry Powder
- 1 cup (22 grams) freeze dried strawberries
Frosting
- 8 tablespoons (½ cup, 113g) salted butter, softened
- 8 ounces (224g) cream cheese, at room temperature
- 2 ½ cup (300 grams) powdered sugar
- 1 teaspoon vanilla extract
- 2 to 4 tablespoons milk, to make creamy
Instructions
- Prepare Strawberry Powder: In a small high powered blender, add the freeze dried strawberries and process on high for 30 seconds until they resemble a fine powder.
- Mix Butter and Cream Cheese: In the bowl of a stand mixer fitted with the whisk attachment, combine the softened butter and room temperature cream cheese. Beat on high speed for 1 to 2 minutes until the mixture is fluffy and well combined, being sure to scrape down the sides of the bowl as needed.
- Add Strawberry Powder and Other Ingredients: Add the strawberry powder, powdered sugar, and vanilla extract to the creamy mixture. Start beating on low speed to avoid a sugar cloud, then increase to medium-high speed and blend for 1 to 2 minutes until the frosting is smooth and fluffy.
- Adjust Consistency: Add milk one tablespoon at a time, mixing gently after each addition, to reach the desired creamy consistency for spreading or piping. Alternatively, whisk the frosting by hand if a stand mixer is not available.
Notes
- Ensure the cream cheese and butter are at room temperature for the smoothest frosting.
- Freeze dried strawberries give a concentrated flavor without adding moisture, which helps achieve a perfect frosting texture.
- Adjust the amount of milk based on the desired consistency; less for thicker frosting, more for a spreadable texture.
- This frosting is best used immediately or stored in the refrigerator for up to 3 days. Bring to room temperature and whisk lightly before using if refrigerated.
- Can be used on cakes, cupcakes, or as a dip for fresh fruit.
