Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Spray a 12-cup muffin tin thoroughly with nonstick baking spray to prevent sticking.
- Mix Dry Ingredients: In a small bowl, whisk together the rolled oats, baking powder, cinnamon, and kosher salt until evenly combined.
- Combine Wet Ingredients: In a large bowl, whisk together the eggs, milk, cream, applesauce, and honey until smooth. Then stir in the vanilla extract for added flavor.
- Mix Batter: Pour the dry ingredients into the wet ingredients and gently stir until just combined to avoid overmixing. Fold in the chopped strawberries evenly throughout the mixture.
- Divide and Bake: Spoon the oatmeal mixture evenly into the prepared muffin tin, filling each cup nearly full. Bake in the preheated oven for about 25 minutes, or until the oatmeal cups are set and golden brown on top.
- Serve: Remove from oven and allow to cool slightly. Serve warm or at room temperature with a drizzle of cream and a sprinkle of sliced almonds. Optionally, add extra honey, Greek yogurt, or nut butter as toppings for added richness and texture.
