Ingredients
Fudge Base
- 600 g (3 ¼ cups + 1 tbsp) white chocolate
- 397 g (14 oz) condensed milk
Strawberry Swirl
- 23 g (about 2 tbsp) strawberry jelly (powdered)
Topping (Optional)
- Freeze-dried strawberries, for garnish
Instructions
- Prepare the Tin: Line an 8-inch square tin with baking parchment and set it aside to prevent the fudge from sticking.
- Melt the White Chocolate: Gently melt the white chocolate in the microwave using 10-20 second bursts, stirring between each burst to avoid burning. Once melted, add the condensed milk and stir thoroughly until the mixture is smooth and fully combined.
- Pour and Swirl: Pour about two-thirds of the fudge mixture into the prepared tin and spread it evenly. To the remaining one-third in the bowl, add the strawberry jelly powder and mix well to incorporate. Quickly dollop the strawberry-flavored mixture over the white chocolate fudge, then use a knife or skewer to gently swirl the two mixtures together to create a marbled effect.
- Add Topping: Sprinkle freeze-dried strawberry pieces over the top of the fudge, gently pressing them in slightly so they adhere well.
- Chill to Set: Place the tin in the refrigerator and allow the fudge to set and firm up for at least a few hours, preferably overnight.
- Cut and Store: Once fully set, cut the fudge into 25 pieces and store them in an airtight container to maintain freshness.
Notes
- Be careful when melting white chocolate to avoid overheating, which can cause it to seize.
- Freeze-dried strawberries add a crunchy texture and enhance the strawberry flavor but can be omitted if unavailable.
- The fudge needs sufficient chilling time to set firmly; do not rush this step.
- Store fudge in an airtight container in the fridge for up to one week for best freshness.
- You can experiment with different jelly powders to create other flavor variations.
