Ingredients
Steak and Marinade
- 1 ½ pounds flank steak or skirt steak, thinly sliced against the grain
- 2 tablespoons extra virgin olive oil, divided
- 2 tablespoons homemade steak seasoning
Vegetables and Seasoning
- 1 medium yellow onion, thinly sliced
- 3 medium bell peppers, thinly sliced (use mixed colors for best flavor and color)
- 1 pinch kosher salt
- 2 tablespoons tomato paste
- 1 teaspoon chili powder
- 1 teaspoon red chili flakes, adjust for heat preference
Slider Assembly
- 1 package (12-count) Hawaiian rolls (such as King’s Hawaiian)
- 6 slices Pepper Jack cheese
- 1 cup (113 g) mozzarella cheese, shredded
- ¼ cup (½ stick / 57 g) unsalted butter, melted
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon garlic powder
- Salt to taste
Instructions
- Marinate the Steak: Toss thinly sliced steak with 1 tablespoon olive oil and homemade steak seasoning in a large bowl until evenly coated. Cover and marinate for at least 30 minutes, or refrigerate overnight for deeper flavor.
- Cook the Vegetables: Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add sliced onions and bell peppers with a pinch of kosher salt. Sauté for 5 to 7 minutes until softened and lightly caramelized. Remove from skillet and set aside.
- Cook the Steak: In the same skillet, cook the marinated steak in a single layer, working in batches if necessary, for 3 to 5 minutes until browned and cooked through. Stir in tomato paste, chili powder, and red chili flakes, cooking for 1 to 2 minutes until the tomato paste darkens and coats the steak.
- Combine Vegetables and Steak: Return sautéed onions and peppers to the skillet with the steak. Toss everything together until well combined, then remove from heat.
- Preheat Oven: Set oven to 375°F (190°C) to prepare for baking the sliders.
- Assemble the Sliders: Slice Hawaiian rolls horizontally without separating them. Place the bottom half in a 9×13-inch baking dish. Layer with Pepper Jack cheese slices followed by half of the shredded mozzarella. Spoon the steak fajita mixture evenly over the cheese layers. Sprinkle remaining mozzarella on top, then cover with the top halves of the rolls.
- Prepare Garlic Butter Topping: Mix melted butter with chopped parsley, garlic powder, and salt to taste. Brush this garlic butter generously over the tops of the assembled rolls.
- Bake the Sliders: Cover the baking dish with foil and bake for 15 to 20 minutes until the cheese melts. Remove the foil and bake for an additional 5 to 8 minutes until the tops turn golden brown.
- Serve: Brush any remaining garlic butter over the baked sliders. Slice and serve warm for best flavor and texture.
