Ingredients

Spinach Filling

Instructions

  1. Preheat and sauté aromatics: Preheat your oven to 400°F (200°C). Dice the onion and place it in a pan or skillet with 1 tablespoon of butter over medium-high heat. Cook for 3-4 minutes until softened. Add the minced garlic and sauté for an additional minute.
  2. Cook spinach mixture: Add the thawed and drained chopped spinach to the pan. Season with salt and pepper and cook until any excess moisture evaporates, stirring occasionally.
  3. Combine filling ingredients: Transfer the cooked spinach mixture to a large bowl. Add the chopped herbs, crumbled feta, shredded cheese, and softened cream cheese. Gently mix until all ingredients are well combined.
  4. Prepare puff pastry: On a floured surface, roll out the puff pastry sheets and cut them into squares or rectangles roughly 4×6 inches in size.
  5. Fill and seal pastry: Spoon the spinach and cheese filling onto each pastry piece. Fold the pastry over to enclose the filling and press the edges firmly with a fork to seal. Cut a few slits on top of each pastry for ventilation or use a lattice cutter for decorative tops.
