A refreshing and vibrant Spinach Avocado Salad with sweet oranges, creamy avocado, tangy feta cheese, and a homemade balsamic vinaigrette, perfect for a light lunch or a healthy side dish.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Balsamic Vinaigrette:

  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 2 tablespoons balsamic vinegar
  • 5 tablespoons extra virgin olive oil
  • Ground black pepper to taste

Salad:

  • 5 ounces baby spinach
  • 2 large navel oranges
  • 2 medium ripe avocados, diced
  • 2 small shallots or ½ red onion, thinly sliced
  • ⅓ cup crumbled feta or goat cheese
  • ¼ cup sliced almonds (optional)
  • ¼ cup dried cranberries (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the dressing: Whisk together the Dijon mustard, honey, balsamic vinegar, extra virgin olive oil, and ground black pepper until well combined. Set aside to allow flavors to meld.
  2. Prepare the spinach base: Place the baby spinach in a large salad bowl or arrange on a platter as the base for your salad.
  3. Segment the oranges: Cut off the top and bottom ends of each orange to create flat surfaces. Place an orange on one cut end and carefully slice away the peel and white pith with a sharp knife, making sure to retain as much orange flesh as possible. Cut the peeled orange lengthwise in half, then slice into ½-inch half circles.
  4. Assemble the salad: Arrange the orange slices and diced avocado evenly over the spinach. Scatter thinly sliced shallots (or red onion), crumbled feta or goat cheese, dried cranberries, and sliced almonds over the top if using. Season with salt and freshly ground black pepper to taste.
  5. Dress and serve: Drizzle the prepared balsamic vinaigrette over the salad or serve it on the side to allow guests to add as much as they prefer. Toss lightly before eating for an even distribution of flavors.

Notes

  • Use ripe avocados to ensure creamy texture and rich flavor.
  • To save time, you can prepare the dressing a day ahead and store it refrigerated.
  • Substitute goat cheese for feta for a tangier taste.
  • Omit cranberries and almonds to make the salad nut-free and reduce sweetness.
  • For extra crunch, toast the sliced almonds lightly before adding.
