This Spider Web Ice Cream Pie is a fun and festive dessert perfect for Halloween or any special occasion. Made with a crunchy chocolate marshmallow crust, creamy vanilla bean ice cream filling, and topped with a whimsical chocolate syrup spider web design, this no-bake pie combines delightful textures and flavors that will impress your guests.

  • Total Time: 1 hour 50 minutes
  • Yield: 8 servings

Ingredients

For the Crust

  • 1 cup miniature marshmallows
  • 1/2 cup Hershey’s Chocolate Syrup, plus extra for swirling
  • 1 Tablespoon butter
  • 3 cups Rice Krispies Cereal

For the Filling

  • 1.5 quart vanilla bean ice cream

Instructions

  1. Prepare the Pie Plate: Butter a 9″ deep dish pie plate thoroughly to ensure the pie crust will not stick.
  2. Melt the Marshmallow Mixture: In a medium saucepan over low heat, combine miniature marshmallows, 1/2 cup chocolate syrup, and butter. Stir continuously until the marshmallows and butter are completely melted and the mixture is smooth.
  3. Combine with Cereal: Remove the saucepan from heat and fold in the Rice Krispies cereal. Stir well until all the cereal is evenly coated with the chocolate marshmallow mixture.
  4. Form the Crust: Transfer the sticky mixture to the prepared pie plate. Press it firmly and evenly over the bottom and up the sides of the pie plate to create the crust. This forms a sturdy base for the ice cream.
  5. Freeze the Crust: Place the crust in the freezer for about 30 minutes to firm up.
  6. Add Ice Cream Filling: Scoop about 1 to 1.5 quarts of vanilla bean ice cream into the crust. Spread it evenly to fill the pie.
  7. Freeze Again: Return the pie to the freezer for approximately 1 hour, allowing the ice cream to set.
  8. Create the Spider Web Design: Remove the pie from the freezer and drizzle additional chocolate syrup on top. Using a toothpick or skewer, drag lines from the center to the edge to mimic a spider web pattern. Decorate with plastic spiders if desired.
  9. Final Freeze: Place the pie back in the freezer until you are ready to serve.
  10. Serve: Before serving, let the pie rest at room temperature for about 10 minutes to soften slightly and allow for easier slicing.

Notes

  • Use a sturdy pie plate since the crust can be sticky and heavy.
  • The marshmallow mixture should be stirred continuously to prevent burning.
  • Swirling the chocolate syrup immediately before serving helps maintain a fresh look.
  • Optional plastic spider decorations add a fun Halloween touch but avoid edible toxic decorations.
  • Letting the pie sit out a few minutes before slicing improves texture and presentation.
