- 1 tablespoon chopped cilantro
- 1 tablespoon chopped basil

Instructions
- Sauté vegetables: In a pot or Dutch oven, heat the oil over medium heat. Add chopped onions and diced carrots, cooking for 4-6 minutes until onions are translucent. Stir occasionally to prevent sticking.
- Add aromatics: Stir in the minced garlic and ginger, cooking for about 1 minute until aromatic but not browned.
- Incorporate pastes: Add the tomato paste and Thai red curry paste to the pot. Sauté for approximately 2 minutes, stirring frequently to blend flavors.
- Add liquids and lentils: Pour in the fish sauce and broth, stirring to combine. Add the rinsed red lentils, stir, and bring the mixture to a boil.
- Simmer lentils: Cover the pot and reduce heat to low. Simmer gently for 15-20 minutes until lentils are tender, stirring frequently. If mixture thickens too much, add more broth as needed.
- Finish with coconut milk and herbs: Stir in the coconut milk and cook uncovered for another 5 minutes. Remove from heat and mix in lemon zest, chopped cilantro, and basil.
- Serve: Ladle the curry over brown rice or quinoa. Garnish with a dollop of Greek yogurt or sour cream, extra chopped cilantro, and serve with naan or pita bread if desired.
Notes
- Adjust the amount of Thai red curry paste to make the curry milder or spicier according to taste.
- Using full-fat coconut milk gives a richer texture and flavor.
- For a strictly vegan version, substitute fish sauce with soy sauce or tamari.
- Adding lemon zest brightens the curry but is optional.
- Stir frequently during simmering to prevent lentils from sticking or burning.
