Instructions

  1. Preheat oven: Set your oven to 350°F (175°C) to ensure it reaches the perfect baking temperature for the fruit mixture.
  2. Prepare the fruit: Core and slice the apples and pears into roughly 1/2-inch thick lengthwise pieces. Place these slices into a large mixing bowl or directly into a large baking or casserole dish.
  3. Add spices and lemon juice: Sprinkle ground cinnamon and ground ginger over the fruit. Squeeze the juice from half a lemon onto the mixture to add brightness and balance.
  4. Add melted coconut oil and combine: Melt the coconut oil in the microwave for about 30 seconds until liquid. Pour it over the fruit and toss everything together until the fruit slices are evenly coated with the spices, lemon juice, and coconut oil.
  5. Transfer and bake fruit: If the fruit is in a mixing bowl, transfer it to a baking dish. Bake the fruit in the preheated oven for 30 to 35 minutes until they become tender and lightly browned.
  6. Prepare pomegranate seeds: While the fruit bakes, remove the pomegranate seeds (arils) using a colander submerged in water to minimize mess and speed up the process.
