This Spiced Baked Fruit recipe is a warm and flavorful dessert that combines honeycrisp apples, bosc pears, aromatic spices like cinnamon and ginger, and a hint of lemon juice, all baked to tender perfection. Enhanced with toasted pecans and vibrant pomegranate seeds, this dish offers a delicious balance of sweetness, spice, and crunch, perfect for a wholesome, comforting treat or a healthy dessert option.

  • Total Time: 55 minutes
  • Yield: 4 servings

Ingredients

Fruit

  • 2 medium apples (honeycrisp preferred)
  • 2 bosc pears (ripe but firm)
  • 1/2 a pomegranate (seeds only)

Spices and Flavorings

  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 a lemon (juice only)

Other

  • 2 Tbsp coconut oil (melted)
  • 1/2 cup pecans (optional; raw/unsalted)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare it for the baking process.
  2. Prepare the Fruit: Core and slice the apples and pears into roughly 1/2-inch thick lengthwise pieces. Place the sliced fruit in a mixing bowl or directly in a large baking or casserole dish.
  3. Mix Spices and Oil: Add the ground cinnamon, ground ginger, and fresh lemon juice to the fruit. Melt the coconut oil in the microwave for about 30 seconds until liquid, then pour it over the fruit. Mix thoroughly until all slices are evenly coated with spices and oil.
  4. Bake Fruit Mixture: If you mixed the fruit in a bowl, transfer it to a baking dish. Bake the fruit in the oven for 30-35 minutes until the fruit is tender and lightly browned.
  5. Prepare Pomegranate Seeds: While the fruit bakes, remove the seeds from the pomegranate. An easy way is to do this submerged in a colander filled with water to reduce mess.
  6. Add Toppings and Toast Pecans: After the baking time, remove the fruit dish from the oven. Sprinkle the pomegranate seeds and pecans over the baked fruit. Return to the oven and bake for an additional 7-8 minutes to allow the pecans to toast.
  7. Serve Warm: Remove from the oven and serve immediately while the baked fruit is still warm and fragrant.

Notes

  • Using honeycrisp apples adds a natural sweetness and crisp texture, but other apples can be substituted.
  • Ensure pears are ripe but firm to prevent them from becoming too mushy during baking.
  • To easily de-seed pomegranates, work in a bowl of water or a colander submerged in water to reduce juice splatter.
  • Pecans are optional but add a nice crunch and nutty flavor when toasted.
  • Serve this dessert warm by itself or with a dollop of yogurt or vanilla ice cream for extra indulgence.
  • For a nuttier flavor, try substituting coconut oil with melted butter if not avoiding dairy.
