Ingredients
For the Dough
- ¼ cup sourdough discard
- 2 cups all-purpose flour (or gluten free flour)
- 1 tbsp olive oil
- 1 tsp sea salt
- ¾ cup water
For the Pizza
- pizza sauce (as needed)
- cheese (as desired)
- toppings (your choice)
Instructions
- Mix Dough Ingredients: In a mixing bowl, combine sourdough discard, flour, olive oil, sea salt, and water. Use your hands to mix the ingredients thoroughly until a cohesive dough forms, then roll it into a ball.
- Ferment the Dough: Cover the mixing bowl with a lid and let it rest at room temperature for 24 hours. This allows the dough to ferment, developing flavor and texture.
- Preheat Oven and Skillet: After fermentation, preheat your oven to 500°F (260°C). Place a large cast iron skillet in the oven to heat up thoroughly.
- Roll Out Dough: Lightly flour a clean surface and a rolling pin. Roll the dough out carefully into a ¼-inch thick circle, shaping it evenly for an ideal pizza base.
- Cook Dough on Stovetop: Remove the hot skillet from the oven with care, then place the rolled dough into the skillet. Set the skillet on medium heat on the stovetop and cook for about 5 minutes until the bottom is lightly golden and no longer wet.
- Add Sauce and Toppings: Turn off the stovetop heat. Spread pizza sauce evenly over the partially cooked crust, then add cheese and your favorite toppings.
- Bake the Pizza: Transfer the skillet back to the preheated oven. Bake for 5 to 10 minutes, or until the cheese is melted and bubbly and the crust edges are golden brown.
- Serve: Remove the skillet from the oven, slice the pizza, and serve warm for a delicious homemade sourdough pizza experience.
Notes
- The recipe can be made using either all-purpose or gluten free flour; results and dough rise may vary.
- Using a cast iron skillet helps achieve a crispy crust on the bottom of the pizza.
- Ensure the skillet is very hot before placing the dough to prevent sticking and promote crust browning.
- Keep an eye on the pizza while baking, as oven temperatures vary and cheese can melt quickly.
- Letting the dough ferment for the full 24 hours enhances flavor, but timing can be adjusted for quicker preparation.
