Ingredients

Crust and Dough

  • 1/2 cup salted butter, softened
  • 1/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup graham cracker crumbs

Filling and Topping

  • 7 ounce container marshmallow creme
  • 4 Hershey chocolate bars (1.5 ounce each)
  • 1/2 cup mini marshmallows, plus extra for topping
  • Optional: broken pieces of graham crackers for garnish

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease a 9-inch regular pie pan. This will prevent sticking and ensure easy removal of the pie after baking.
  2. Mix Dough: In a large bowl, beat together the softened butter, light brown sugar, and granulated sugar until smooth and creamy. Beat in the egg and vanilla extract until just combined. Stir in the all-purpose flour and graham cracker crumbs until a dough forms.
  3. Press Dough Base: Press about two-thirds of the dough evenly into the bottom and up the sides of the prepared pie pan to create the crust.
  4. Add Filling: Carefully spread the marshmallow creme over the bottom of the crust, creating an even layer. Next, place three of the Hershey chocolate bars broken into squares evenly on top of the marshmallow layer. Sprinkle the mini marshmallows evenly over the chocolate.
  5. Form Top Crust: Take the remaining dough and divide it into small, approximately 2-inch disks. Lightly press these disks over the marshmallow topping to partially cover it; it’s fine if some marshmallows peek through for a rustic look.
  6. Bake Pie: Bake the pie in the preheated oven for 13 minutes. This initial baking sets the crust and softens the marshmallow layer.
  7. Add Final Toppings and Bake More: Remove the pie from the oven and place a few more mini marshmallows on top along with the remaining Hershey chocolate bar broken into pieces. Optionally sprinkle broken graham cracker pieces on top for garnish. Return the pie to the oven and bake for another 5 to 7 minutes until the marshmallows are toasted and the chocolate is melted. For extra browning, broil on high for 1 minute watching carefully to avoid burning.
  8. Cool and Serve: Allow the pie to cool for at least 30 minutes so the filling can set properly. Then slice into 8 generous pieces and serve warm or at room temperature for the best gooey, melty texture.
