Ingredients
Appetizer Base
- 1 medium cucumber (about 6-7 inches)
Filling
- 3.5 oz cream cheese, softened
- 1 tbsp fresh chives, finely chopped
- 1 tsp lemon juice
- 1/2 tsp lemon zest
- 1/2 tsp black pepper
Topping
- 3.5 oz smoked salmon
- Fresh chives for garnish
Instructions
- Prepare the cucumber: Wash the cucumber thoroughly. If desired, use a vegetable peeler to create stripes in the skin for a decorative look. Slice cucumber into approximately 1/2-inch thick rounds and set aside.
- Make the cream cheese mixture: In a small bowl, combine the softened cream cheese, lemon juice, lemon zest, finely chopped chives, and black pepper. Stir until smooth and well mixed.
- Assemble the appetizers: Spoon or spread the cream cheese mixture evenly on top of each cucumber slice.
- Add the smoked salmon: Place a small piece of smoked salmon on each cream cheese-topped cucumber. Fold or roll the salmon for a neat presentation.
- Garnish and chill: Garnish each appetizer with a small sprig of chive. Refrigerate for 15-30 minutes before serving to enhance flavor melding.
Notes
- Use a sharp knife for clean cucumber slices.
- Softened cream cheese spreads more easily; leave it at room temperature for 15 minutes before mixing.
- This appetizer is best served chilled and within the same day for freshness.
- Can be customized with dill or capers for additional flavor.
