Potatoes
- 2 ½ pounds Yukon Gold potatoes, peeled and quartered

- 2 cups (about 4 ½ ounces) smoked Gouda cheese, finely grated
- ½ cup sour cream, at room temperature
- ½ to ¾ cup heavy cream or half and half, warm
Instructions
- Prepare the potatoes: Place the peeled and quartered Yukon Gold potatoes into a large pot and cover them with cold water. Add a generous pinch of salt to the water to season.
- Cook the potatoes: Bring the pot to medium-high heat and allow the water to come to a boil. Let the potatoes cook for about 15 minutes until they are very tender and easily pierced with a fork. Drain the potatoes thoroughly in a colander.
- Rice the potatoes: Using a potato ricer, press the drained potatoes back into the pot while off the heat to create a smooth, fluffy texture without lumps.
- Add butter: Stir in the sliced butter into the hot potatoes, mixing until the butter has completely melted and is fully incorporated.
- Add cheese and cream: Add the finely grated smoked Gouda, room temperature sour cream, and ⅓ cup of the warm heavy cream to the potatoes. Season with a pinch of salt and freshly ground black pepper. Stir everything together until smooth and creamy. Add additional heavy cream as needed to reach your desired consistency.
- Adjust seasoning: Taste the mashed potatoes and adjust the salt and pepper as needed to enhance the flavors.
- Serve: Serve the smoked Gouda cheesy mashed potatoes immediately while warm for the best flavor and texture.
