Peanut Sauce

Instructions
- Prepare the Vegetables and Chicken: Add the diced red bell pepper, diced yellow onion, and chopped garlic to the bottom of your slow cooker. Then, place the chicken breasts on top of the vegetables to layer the flavors.
- Make the Peanut Sauce: In a bowl or glass measuring cup, whisk together the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth and well combined.
- Cook the Chicken: Pour the prepared peanut sauce evenly over the chicken breasts and vegetables in the slow cooker. Cover and cook on HIGH for 2-3 hours or on LOW for 4-5 hours, until the chicken is tender and fully cooked through.
- Finish and Serve: Remove the slow cooker lid, then stir in the lime juice and chopped cilantro to add fresh brightness and herbaceous flavor before serving. Enjoy your creamy peanut chicken!
