Instructions

  1. Prepare and Cook Chicken: Place the chicken in the bottom of a 6-quart or larger slow cooker. In a medium bowl or large measuring cup, whisk together soy sauce, honey, tomato paste, chili paste, minced garlic, and rice vinegar. Pour this sauce over the chicken. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the chicken reaches an internal temperature of 165°F. Optionally flip the chicken halfway through cooking to coat both sides.
  2. Thicken Sauce in Slow Cooker: Remove the chicken to a plate and let it cool slightly. Whisk the cornstarch into the slow cooker liquid. Cover and cook on HIGH for 15 minutes, stirring occasionally, until the sauce thickens. For a thicker sauce, continue cooking up to 30 minutes or use the stovetop method.
  3. Alternate Sauce Thickening (Stovetop): For quicker thickening, after whisking in the cornstarch, transfer the liquid to a medium saucepan. Cook over medium heat, stirring often, for 5 to 10 minutes until the sauce thickens. Ensure your slow cooker insert is stovetop safe if you plan to heat it directly.
  4. Shred and Combine: Shred the slightly cooled chicken with two forks or your fingers. Return the shredded chicken to the slow cooker. If you thickened the sauce on the stove, add it back now. Stir thoroughly to coat the chicken in the honey garlic sauce.
  5. Serve: Serve the shredded honey garlic chicken hot over prepared brown rice, quinoa, or cauliflower rice. Garnish with toasted sesame seeds and chopped green onions for added flavor and texture.
