- ½ green bell pepper, seeded and quartered
- ¼ yellow onion, quartered
- 1 jalapeño, halved and seeded
- 3 garlic cloves
- 3 green onions, white and green parts, thinly sliced, for serving

Meat and Dairy
- 1 pound 90/10 ground beef
- 3 cups shredded cheese (a mix of mozzarella and cheddar recommended)

Pantry
- ⅓ cup ketchup
- 1 tablespoon tomato paste
- 2 teaspoons light brown sugar
- 2 teaspoons chili powder
- 1 teaspoon yellow mustard
- 1 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- ½ teaspoon sea salt
- 2 (9.25-ounce) bags Frito’s Scoops Corn Chips
- 1 (14-ounce) can black beans, drained and rinsed
Instructions
- Minced Vegetables: In a food processor, combine the green bell pepper, yellow onion, jalapeño, and garlic. Pulse 10 to 12 times until the mixture is finely minced and well combined.
- Cook the Beef and Veggies: Heat a large skillet over medium-high heat. Add the ground beef and minced vegetables to the skillet. Cook, breaking up the meat with a wooden spoon, until the beef is browned completely, about 8 to 10 minutes. Drain any excess fat from the pan.
- Add Seasonings and Simmer: Stir in ketchup, ⅓ cup water, tomato paste, light brown sugar, chili powder, yellow mustard, garlic powder, Worcestershire sauce, and sea salt. Mix well to combine all ingredients. Bring the mixture to a simmer, then reduce the heat to medium-low and cook until thickened, approximately 5 minutes.
- Prepare for Broiling: While the beef simmers, preheat your oven’s broiler. Spread the Frito’s Scoops corn chips evenly on a large rimmed baking sheet.
- Assemble Nachos: Spoon the thickened beef mixture evenly over the Frito’s chips. Layer the drained black beans atop the beef, then sprinkle the shredded cheese evenly over everything.
- Broil: Place the baking sheet under the broiler and cook for 8 to 10 minutes, or until the cheese has melted and is bubbly.
- Serve: Remove the nachos from the oven and top with dollops of sour cream, sliced green onions, halved cherry tomatoes, and pickled jalapeños if desired. Serve immediately and enjoy!
Notes
- Make sure to seed the jalapeño to reduce heat if you prefer milder nachos.
- Use a mix of mozzarella and cheddar cheese for the best melt and flavor.
- If you don’t have a broiler, you can bake the nachos at 375°F (190°C) until the cheese melts, about 10-12 minutes.
- Drain excess fat from the beef to keep the nachos from becoming greasy.
- Pickled jalapeños add a nice tangy spice but are optional depending on your heat preference.
