This simple salted caramel sauce recipe creates a rich, smooth, and buttery caramel perfect for drizzling over desserts, stirring into coffee, or enjoying by the spoonful. Made with sugar, water, corn syrup, heavy cream, butter, vanilla, and a touch of salt, it balances sweetness with a hint of saltiness for an irresistible treat.

  • Total Time: 25 minutes
  • Yield: 1 1/2 cups sauce (approximately 1 serving as specified)

Ingredients

Caramel Base

  • 2 cups granulated sugar
  • 3/4 cup water
  • 2 1/2 tablespoons corn syrup

Finishing Ingredients

  • 1 1/3 cups heavy cream, room temperature
  • 5 tablespoons unsalted butter, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon kosher salt

Instructions

  1. Combine sugar, water, and corn syrup: In a medium-sized saucepan, combine the granulated sugar, water, and corn syrup. Stir with a wooden spoon until the sugar is nearly dissolved, creating an even syrup base.
  2. Simmer without stirring: Place the saucepan over medium heat and bring the mixture to a simmer. Once simmering, avoid stirring to prevent crystallization and ensure smooth caramelization.
  3. Brush away sugar crystals: Periodically use a wet pastry brush to clean the interior sides of the saucepan, washing away any stray sugar crystals to prevent graininess in the caramel.
  4. Watch the caramel color: Carefully observe as the syrup bubbles and changes color from clear to a deep amber, similar to a copper penny, signaling optimal caramelization.
  5. Incorporate butter: Remove the saucepan from heat immediately upon reaching deep amber color. Carefully whisk in the room-temperature unsalted butter until fully melted and incorporated for a rich texture.
  6. Add cream, vanilla, and salt: Slowly pour in the room-temperature heavy cream, vanilla extract, and kosher salt while continuously whisking to combine smoothly and prevent separation.
  7. Cook and thicken sauce: Return the saucepan to medium heat and cook the mixture, stirring constantly, for 2 minutes to blend flavors and thicken the sauce. Remove from heat and allow the sauce to cool completely to room temperature for a silky smooth finish.

Notes

  • Use room temperature butter and cream to prevent the caramel from seizing when added.
  • Do not stir the caramel once the syrup begins simmering to avoid crystallization.
  • If sugar crystals form on the side of the pan, brushing with a wet pastry brush will help dissolve them and keep the sauce smooth.
  • Store the finished sauce in an airtight container in the refrigerator for up to 2 weeks. Reheat gently before use.
  • This salted caramel sauce pairs beautifully with ice cream, cakes, coffee, or pancakes.
