Instructions
- Simmer Cream: Heat the heavy cream in a saucepan over medium-low heat and simmer for about 20 minutes, stirring often to prevent burning or sticking.
- Prepare Potatoes: Peel the russet potato and cut it into large, uniform pieces for even cooking.
- Cook Potatoes: Place the potato pieces in a large saucepan, add salt, and cover with cold water by about an inch. Bring to a boil over medium-high heat and cook for 10-15 minutes until tender when pierced with a fork, stirring occasionally.
- Drain and Mash: Drain the potatoes thoroughly using a colander, then return them to the pot and mash until smooth and uniform.
- Add Butter and Milk: Gradually stir in 1/4 cup of warm milk and the room temperature butter into the mashed potatoes. Add more warm milk a tablespoon at a time to reach your preferred consistency. Cover the pot to keep warm.
- Finish Cream Sauce: Stir the shredded Parmesan cheese and chopped basil into the simmered cream, lower the heat, and keep warm.
- Season Shrimp: Thoroughly pat the shrimp dry to ensure even cooking. In a small dish, mix together Italian seasoning, black pepper, and paprika, then coat the shrimp evenly with the seasoning mixture.
- Cook Shrimp: In a skillet over medium heat, melt 2 tablespoons of butter with the minced garlic, stirring frequently to infuse the butter with garlic flavor. Add the seasoned shrimp and cook for 2-3 minutes per side until they turn opaque. Be careful not to overcook.
- Plate the Dish: Divide the mashed potatoes evenly onto two plates. Create a small well in the center of each mound of potatoes, then pour the warm cream sauce into the wells. Top with the cooked shrimp. For extra flavor, drizzle the garlic butter from the skillet over the shrimp and potatoes before serving.
