Ingredients
Sauce
- ½ Cup salted butter (melted)
- 3 Tablespoons chicken broth (or substitute with dry white wine or vegetable broth)
- 2 Tablespoons dried parsley
- 1 Tablespoon lemon juice (about ½ of a lemon)
- 2 Cloves garlic (minced)
- 1 Teaspoon garlic powder
- 1 Teaspoon lemon pepper
- ⅛ Teaspoon salt (use ¼ teaspoon if using unsalted butter)
- ¼ Teaspoon red pepper flakes
Main
- 1 Pound jumbo shrimp (fresh or thawed)
- 2 Teaspoons lemon zest (optional)
Instructions
- Preheat Grill: Preheat your grill to 350 degrees Fahrenheit to ensure even cooking of the shrimp foil packets.
- Prepare Foil: Cut 4 pieces of aluminum foil into 12-inch squares to create individual shrimp packets for grilling.
- Mix Sauce: In a bowl, combine melted butter, chicken broth, dried parsley, lemon juice, minced garlic, garlic powder, lemon pepper, salt, and red pepper flakes. Stir well until all ingredients are thoroughly mixed.
- Butter Preparation Note: Prepare the butter sauce ahead of time, especially if camping, by mixing and storing in a small mason jar for easy packing and use on site.
- Arrange Shrimp: Place the shrimp on a large baking sheet or plate. For camping, store the shrimp in a Ziplock bag to keep fresh.
- Add Sauce to Shrimp: Pour the prepared butter mixture over the shrimp. The cold shrimp will cause the butter to congeal slightly, but this will melt during grilling and infuse the shrimp with flavor.
- Sprinkle Lemon Zest: Optionally sprinkle lemon zest over the shrimp to enhance the citrus aroma and brightness.
- Form Foil Packets: Place about 6 shrimp onto each pre-cut foil square, then fold and seal to create a closed foil pocket, ensuring no steam can escape.
- Grill Packets: Place the foil packets on the preheated grill or over a campfire. Cover if possible to maintain heat.
- Cook Shrimp: Grill the foil packs for 8 to 10 minutes, or until the shrimp are opaque and cooked through, adjusting time as needed based on shrimp size.
Notes
- Using salted butter helps balance seasoning, but if using unsalted butter, increase salt to ¼ teaspoon.
- Butter mixture can be prepared ahead and stored refrigerated in a mason jar for convenience, especially when camping.
- Jumbo shrimp cook quickly; avoid overcooking to maintain tenderness.
- Substitute chicken broth with dry white wine or vegetable broth for a different flavor profile.
- If cooking without a grill, foil packets can be baked in an oven at 375°F for about 10-12 minutes.
