Ingredients
Noodles
- 7 ounces udon noodles (vacuum-packaged or frozen)
- 1/2 tablespoon cooking oil
Protein and Vegetables
- 1/2 pound raw shrimp (peeled, deveined, tails removed)
- 12 ounces broccoli slaw
- 1 green onion, chopped
- 1 teaspoon jarred minced garlic
- 1 tablespoon cooking oil
- 1/2 tablespoon cooking oil
Sauce
- 1/2 tablespoon dark soy sauce (not regular soy sauce)
- 1 tablespoon oyster sauce
- 1 tablespoon dark soy sauce (not regular soy sauce)
- 1/2 tablespoon rice vinegar
- 2 tablespoons brown sugar
- 1/4 teaspoon black pepper
- 1 teaspoon toasted sesame oil
Instructions
- Prepare the noodles: Cook the udon noodles according to the package instructions. Once cooked, if the noodles haven’t been cooked in oil, toss them with 1/2 tablespoon of cooking oil to prevent sticking, then set aside.
- Chop green onion: While the noodles cook, finely chop the green onion and set aside for garnish.
- Make the sauce: In a small bowl, whisk together the oyster sauce, dark soy sauces, rice vinegar, brown sugar, black pepper, and toasted sesame oil until the sugar dissolves. Set this sauce mixture aside.
- Sauté garlic and broccoli slaw: Heat 1 tablespoon of cooking oil in a skillet over medium heat. Add the minced garlic and broccoli slaw, stirring and cooking for 3 to 5 minutes until the vegetables soften slightly. Remove the sautéed vegetables from the pan and place them in a bowl.
- Cook shrimp: In the same skillet, add another 1/2 tablespoon of cooking oil. Add the shrimp and 1/2 tablespoon of dark soy sauce, cooking the shrimp for about 2 minutes on each side until they turn pink and opaque.
- Fry noodles: Add the cooked udon noodles to the skillet with the shrimp. Increase the heat to high and stir-fry the mixture continuously until the noodles develop a slight crisp texture, ensuring they don’t burn.
- Combine all ingredients: Pour the prepared sauce and the sautéed broccoli slaw mixture back into the skillet. Stir everything together thoroughly to evenly coat the noodles, shrimp, and vegetables with the sauce.
- Finish and serve: Turn off the heat, sprinkle the chopped green onion over the dish, and serve immediately. Enjoy your flavorful shrimp and noodles!

- Use dark soy sauce for its richer, slightly sweeter taste compared to regular soy sauce.
- If udon noodles are unavailable, thick fresh egg noodles may be a substitute, though texture will vary.
