Pasta and Shrimp

  • 12 oz pasta (linguine, spaghetti, or fettuccine)
  • 1 lb jumbo shrimp (peeled and deveined)
  • ½ teaspoon kosher salt (plus more to taste)
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Sauce and Flavorings

  • 3 cloves garlic (minced)
  • 1 shallot (thinly sliced)
  • ¼ teaspoon red pepper flakes
  • Zest and juice of 1 lemon
  • ½ cup white wine (or substitute additional chicken broth)
  • 1 cup chicken broth
  • 2 tablespoons butter

  • 4 cups baby spinach
  • ½ cup freshly grated parmesan cheese

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Reserve ½ cup of the pasta cooking water, then drain the pasta and set aside.
  2. Season the shrimp: Pat the shrimp dry with paper towels. Sprinkle evenly with kosher salt and black pepper to season.
  3. Cook the shrimp: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp in a single layer and cook for 1 to 2 minutes on each side, until they turn pink and are just cooked through. Remove the shrimp from the skillet and set aside.
  4. Make the sauce: In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the sliced shallot for 2 to 3 minutes until softened.
