Instructions

  1. Preheat the oven: Set your oven to 450°F (232°C) and line a sheet pan with parchment paper to prepare for roasting.
  2. Prepare the gnocchi: Open the package of gnocchi and spread them out evenly on the lined sheet pan.
  3. Add cherry tomatoes: Add 2 pints of cherry tomatoes onto the pan. Ensure there’s enough space between each tomato for roasting; remove some if the pan is overcrowded.
  4. Prepare garlic: Smash 2-4 cloves of garlic using the side of a chef’s knife and add them whole to the pan for flavor.
  5. Incorporate mozzarella and oil: Open the tub of marinated mozzarella, transfer the cheese to a bowl, and pour most of the herbed oil onto the pan with the gnocchi and tomatoes. Use your hands to coat everything evenly, making sure the herbs and oil cover all ingredients.
  6. Season and arrange: Spread the gnocchi, tomatoes, and garlic in a single layer on the pan. Generously season with salt and freshly ground pepper.
  7. Roast: Place the sheet pan in the oven and roast for 17-20 minutes until the tomatoes start to burst and the gnocchi turn golden brown.
  8. Cool and add mozzarella: Remove the pan from the oven and let it cool for a few minutes to prevent the cheese from melting excessively. Add the marinated mozzarella to the pan or transfer all ingredients to a serving platter and gently toss together.
  9. Garnish and serve: Top with fresh basil leaves and grated Parmesan cheese. For an extra layer of flavor, drizzle balsamic vinegar over each serving before enjoying.
