Marinade

- 1 1/2 teaspoons salt
- 1 tablespoon honey
Main Ingredients
- 4 salmon fillets (wild caught if possible)
- 1 red bell pepper (deseeded and chopped)
- 1 green bell pepper (deseeded and chopped)
- 1 yellow bell pepper (deseeded and chopped)
- 1 onion (cut into wedges)
Instructions
- Preheat the Oven: Set your oven to the grill or broil setting on high heat and prepare a baking sheet by spraying it evenly with cooking oil spray to prevent sticking.
- Prepare the Marinade: In a bowl, whisk together lime juice, chopped parsley, olive oil, water, minced garlic, red chili flakes, ground cumin, salt, and parsley until well combined. Add the honey last and whisk until it fully blends into the mixture for a smooth and flavorful marinade.
- Marinate Salmon and Vegetables: Arrange the salmon fillets, chopped bell peppers, and onion wedges in a single layer on the prepared baking tray. Pour half of the marinade evenly over everything. Toss the peppers and onions to coat thoroughly and turn the salmon fillets to ensure they are fully coated in the marinade.
- Broil the Ingredients: Place the baking tray in the oven under the broiler. Cook until the peppers begin to char around the edges, approximately 10 minutes, and until the salmon reaches your desired doneness, about 10 minutes. Keep an eye to avoid overcooking.
- Finish and Serve: Remove from the oven and serve immediately. Accompany with lime wedges and the remaining marinade for extra flavor. If the peppers need further roasting, transfer the salmon to a separate plate and return the peppers to the oven until they are cooked to your liking.

- Adjust red chili flakes to your preferred spice level for milder or spicier results.
- Use wild-caught salmon for better flavor and sustainability.
- If you don’t have cooking spray, lightly brush the tray with olive oil.
- Leftover marinade can be used as a sauce but discard after contact with raw fish if not cooked.
