These Sheet Pan Breakfast Burritos offer an easy and delicious way to enjoy a protein-packed breakfast. Made by baking a blended mixture of eggs, cottage cheese, egg whites, and flavorful spices alongside cooked sausage, bell peppers, and spinach, this recipe simplifies breakfast prep by using a sheet pan. Served with tortillas, cheese, and your choice of Greek yogurt or sour cream and salsa, these burritos are perfect for busy mornings or meal prepping.

  • Total Time: 35 minutes
  • Yield: 6-8 breakfast burritos

Ingredients

Egg Mixture

  • 8 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup egg whites
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 pound cooked breakfast sausage
  • 1 small red bell pepper, finely diced
  • 2 cups baby spinach, chopped

Burrito Assembly

  • 6-8 burrito-sized tortillas
  • 1 cup shredded cheddar cheese
  • Greek yogurt or sour cream, for topping
  • Salsa or pico de gallo, for topping

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit and line a half sheet pan with parchment paper to prevent sticking and facilitate easier cleanup.
  2. Make the egg mixture: In a high-powered blender, combine the eggs, cottage cheese, egg whites, kosher salt, black pepper, onion powder, and garlic powder. Blend until the mixture is smooth and well combined.
  3. Add the fillings: Transfer the blended egg mixture to a bowl and stir in the cooked breakfast sausage, diced red bell pepper, and chopped baby spinach evenly.
  4. Bake the eggs: Pour the combined egg and filling mixture onto the lined sheet pan, spreading it out evenly. Bake in the preheated oven for 20-25 minutes or until the eggs are just set and cooked through. Remove from oven and let cool slightly.
  5. Assemble the burritos: Slice the baked egg sheet into 6 to 8 rectangular portions, depending on desired size. Place one piece onto each tortilla, sprinkle with shredded cheddar cheese, and add a dollop of Greek yogurt or sour cream and salsa or pico de gallo. Optionally, you can lightly toast the assembled burritos in a lightly oiled skillet to crisp the tortillas before serving.

Notes

  • You can substitute turkey sausage or a vegetarian sausage alternative to accommodate dietary preferences.
  • For a lower-fat version, use reduced-fat cheese and omit the cottage cheese or use low-fat cottage cheese.
  • Make ahead and refrigerate the baked egg portion for up to 3 days for quick breakfast assembly.
  • To freeze, wrap assembled burritos individually and freeze for up to 1 month. Reheat in a microwave or oven.
  • Customize toppings like avocado, hot sauce, or fresh cilantro to add extra flavor.
